Is there a way to get the META data for only one column?

For example, my local website only uses a handful of columns. I have a data map for our local column names to the RETS column names. Can I do a quick lookup to get the data type from the Meta data, for only one column?

No. You can get all the fields from the metadata with METADATA-TABLE. But it doesn't go more granular than all the fields for a specific: resource + class combination.
